Greek Cabbage Salad🥕

 

A very popular winter salad inspired from Constantinople also known as Politiki Salata. This salad is crunchy, healthy and detoxifying. So refreshing and delicious when topped with the perfect balance of my Greek salad dressing. This was a winter staple growing up and always on the table during fall and winter months.  It can be stored in the refrigerator in an airtight container, for 3-4 days but without adding the dressing.  I approach my food with a bit of nostalgia and if something isn't in season, it simply isn't eaten as my yiayia would say. This is another beautiful dish loaded with texture and flavor that I was raised on. So sit down and eat like a Greek, the best diet ever!

Tips & Tricks:

 After you put salad together, let the salad sit in the fridge for about 1 hour to marinade before serving. You can shred the vegetables ahead and keep them in an airtight container for 3-4 days without dressing. 

Ingredients:

For the salad:

  • 2 cups shredded green cabbage

  • 1 cup shredded red cabbage

  • 1 cup grated carrots

For the dressing:

  • 8 tablespoons olive oil

  • 4 tablespoons wine vinegar

  • 2 tablespoons of Spike vegetable seasoning

  • 1– 2 tablespoons mountain oregano 

  • Salt and pepper to taste

Cooking Instructions:

Serves Roughly 4 - 6 People

[ 1 ] Chiffonade(shred very finely ribbons) the cabbage using a box grater or a knife  

[ 2 ] Peel and coarsely grate the carrots, I prefer a Julienne style(match sticks)

[ 3 ] Mix the ingredients for the salad in a large bowl.

[ 4 ] Transfer the ingredients for the dressing to a small bowl and whisk with a fork until homogenized. You can also transfer it to a jar, close the lid and shake very well.

[ 5 ] Add the dressing on top of the salad and mix well to combine. Taste and adjust according to your liking.
