Greek chicken kabobs

 

Chicken Souvlaki is Greek chicken kabobs marinated in fresh lemon juice, olive oil, herbs and spices. My “Greek Elixir” marinade is what makes this chicken so tender and juicy. This healthy recipe is classic Greek street food. The marinated chicken is packed with flavor and will bring the taste of Greece right on your table. I love to serve chicken souvlaki with some homemade pita bread, tzatziki and my Greek orzo pasta salad. These beautiful skewers of tender chicken perfectly marinate and seasoned then grilled to perfection will melt in your mouth!

Ingredients:

Serves 4

  • 4 chicken breasts skinless and boneless, cut into bite size cubes (1 ½ inch pieces)

  • 1/4 cup (60 mL) extra virgin olive oil

  • 1/2 lemon, freshly juiced 

  • 2 tsp dried oregano

  • 1 tsp marjoram

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp sweet paprika

  • 1 tsp rosemary garlic spice blend

  • 1/2 tsp dried thyme leaves

Equipment

  • Outdoor grill

  • Bamboo skewers or metal skewers

  • Meat thermometer (optional, but highly recommended)

Cooking Instructions:

[ 1 ] In a large bowl, add cubed chicken. Drizzle olive oil, lemon juice, oregano, and toss to coat. Season chicken well with spices, salt and pepper. Cover and let marinade at room temperature for 30 minutes, or place in the refrigerator and marinate for up to 4 hours.

[ 2 ] When ready to cook, if using wooden skewers, soak skewers in water for at least 30 minutes. Preheat the grill or grill pan over medium-high heat. Carefully, thread the chicken onto skewers. (I use 6” bamboo skewers and put 5 pieces of meat per stick.)

[ 3 ] Grill until golden and the internal temperature reaches 165°, about 6 minutes per side.

[ 4 ] Allow them to rest for 10 minutes before serving. Enjoy!
